It's That Time of Year Again...

Is This Really Happening??

After reading a couple of news articles I was a little upset. Recently an abortionist was killed and the media coverage was everywhere talking about hate crimes, etc. Now a soldier was killed in Arkansas (by a Muslim) and the media never covered it.. I don't understand the reasoning here. So, I did a search on google and wanted to share what I found. The AFA said this morning:
It appears that a Muslim man with political and religious motives murdered a soldier in Arkansas yesterday. This came one day after the shooting of George Tiller. Though the media and White House expressed outrage over the killing of a notorious abortionist, they said little about the murder committed by the young Muslim. I say this is an obvious double standard motivated by political correctness. What do you say?

ConAgra Foods Explosion in Garner, NC

ConAgra Foods , located in Garner, NC, is suspected to have had an ammonia leak which may have caused an explosion at the Slim Jim packaging facility on Tuesday, June 9, 2009. There were 300 employees working at the time of the explosion and all but 3 were accounted for. Many were taken to area hospitals to seek treatment for extensive burns on their bodies and other for minor injuries. Two are still in critical condition at this time and one of the three missing has been located. They had gone to the hospital to receive medical help as the two others remained unaccounted for.

As of early Wednesday morning, June 10, 2009 the other two missing employees were located inside the facility and four remained in critical condition at UNC's burn center in Chapel Hill. Rescue crews were not able to go inside to retrieve the bodies since the structure was not structurally sound since the explosions; instead workers had to cut into the roof to lower a cage from a crane to retrieve the missing employees. Family members of one of the employees said Louis Junior Watson was helping another co-worker when the building collapsed on top of them.

ConAgra foods has set up an employee fund and has donated $100,000. They are asking for donations from their 25,000 nationwide employees as well. They are also covering the medical bills and funerals for their fallen employees. If you would like to make a donation to these families you can click here. Con Agra spokesman, Stepahnie Childs, said that employees will continued to get paid "while this situation is under way."

Momma's meatloaf

Momma's meatloaf:

1 lb ground beef
1 lb ground pork
1/2 cup diced onion
1 egg
1/2 cup plain breadcrumbs
1/3 cup milk
1/3 cup packed brown sugar
3/4 cup tomato ketchup
salt and pepper to taste

In a small bowl mix breadcrumbs with milk and allow to rest for a few minutes. In a large bowl combine the meats, onion and egg. Add the breadcrumb mixture and mix well, adding salt and pepper to taste. In a loaf pan, mix up ketchup and brown sugar... drop formed loaf into pan and cover with foil, bake in a preheated 350 degree oven for 1 hour, remove foil and cook for another 30 minutes. Allow to cool for 10 minutes on the counter before slicing, strain the fat off of the sauce in the bottom of the pan and serve over the slices.

Chicken Pot Pie

Chicken Pot Pie

1 cup potato, diced (I sometimes used canned potatoes, diced up because they're already soft and cook better, IMO)
1 cup chopped onion
1 cup celery, diced
1 cup chopped carrot
1/3 cup melted margarine
1/2 cup all-purpose flour
2 cups chicken broth
1 cup half-and-half
1 teaspoon salt
1/4 teaspoon pepper
4 cups chopped cooked chicken
2 pie crust (either store bought or your own recipe)

Preheat oven to 400°F.
Saute onion, celery, carrots and potatoes in butter for 10 minutes.
Add flour to sauteed mixture, stirring well Cook one minute stirring constantly.
Combine broth and half and half
Gradually stir into vegetable mixture
Cook over medium heat stirring constantly until thickened and bubbly
Stir in salt and pepper; add chicken and stir well
Pour into shallow 2 quart casserole dish and top with pie shells
Cut slits to allow steam to escape.
Bake for 40-50 minutes or until pastry is golden brown and filling is bubbly and cooked through.

Mini Cheesecakes

2 (8 ounce) packages cream cheese
3/4 cup sugar
2 egg
1 teaspoon lemon juice
1 teaspoon vanilla
12 vanilla wafers
1 (21 ounce) can pie filling

Mix softened cream cheese, sugar, eggs, lemon juice and vanilla in bowl.
Place a wafer in bottom of each of 12 cupcake papers (in cupcake tin).
Spoon in cream cheese mixture 3/4 full.
Bake in 375 degree oven for 15 minutes.
Let cool.
Top each with pie filling and refrigerate for 1 hour or more.

Lemon Bundt Cake With Glaze

Cake:

INGREDIENTS:

* 1 cup butter
* 1 1/2 cups granulated sugar
* 1/3 cup lemon juice
* 5 eggs
* 3 cups all-purpose flour
* 2 teaspoons baking powder
* 1/2 teaspoon salt
* 2/3 cup milk


Glaze:
* 1 cup confectioners' sugar
* 2 tablespoons lemon juice

PREPARATION:
In a large mixing bowl with electric mixer, cream butter and sugar together until light and fluffy. Beat in the 1/3 cup lemon juice until well blended. Bet in eggs, one at a time, beating well after each addition. In another bowl, sift together the flour, baking powder, and salt.
Add the flour mixture to the first mixture, a little at a time, alternating with the milk. Pour batter into a greased 12-cup Bundt cake pan. Bake in a preheated 350° oven for 50 to 60 minutes, or until cake springs back when touched with a finger. Also, cake will slightly pull away from sides of pan. Cool for 5 minutes in the pan; invert and cool completely on a rack.
Glaze:
Blend confectioners' sugar with 2 tablespoons lemon juice until smooth; drizzle over the cake.

Bourbon Chicken

2 lbs boneless chicken breast, cut into bite-size pieces
1-2 tablespoon olive oil
1 garlic clove, crushed
1/4 teaspoon ginger
3/4 teaspoon crushed red pepper flakes
1/4 cup apple juice
1/3 cup light brown sugar
2 tablespoons ketchup
1 tablespoon cider vinegar
1/2 cup water
1/3 cup soy sauce

Heat oil in a large skillet.
Add chicken pieces and cook until lightly browned.
Remove chicken.
Add remaining ingredients, heating over medium Heat until well mixed and dissolved.
Add chicken and bring to a hard boil.
Reduce heat and simmer for 20 minutes.

Sprint Service Issues... Anyone Else?

I have an account for my cell phone provided through Sprint. For the last week I have noticed that when I try to make a call that the phone is in roaming mode. Is this happening to anyone else?
